This tool reads the hourly rates that commercial kitchens publish on their own websites. We collect them for the listings on this site. A rate reaches the tool only when the kitchen states it in public.
The tool tells you where your number sits. It never says to raise it or to lower it. Your rent, your equipment, and your local demand set your rate, and this data holds none of those.

Where the numbers come from
Every rate comes from a kitchen's own website. We read the site once and store the low rate, the high rate, the monthly membership, and the minimum booking. A kitchen that publishes no rate is not counted.
The middle rate is the median. Half of the kitchens charge less, and half charge more. A group of fewer than 3 kitchens says nothing, so the tool skips it and uses a wider group instead.
